Super Easy Blueberry Cobbler with Superfood Add-ins

I’ve been making this Blueberry Cobbler recipe from Betty Crocker for over a decade, with a few minor changes. With most dessert recipes, I try to reduce the sugar and butter when possible and add in healthier substitutes or add-ins to improve the nutritional profile. Before I get into the recipe, I’d like to pay a little homage to this dessert because there’s just so much sentiment that comes with it. This recipe uses the original Bisquick™ mix which has been a staple pantry item in our home since I was a teenager. I still remember buying my first box of Bisquick™ pancake mix when I was in the 8th Grade. We had just immigrated to Canada and my brother was born shortly after so it was hard for my mom to grocery shop with a newborn. There was a supermarket just down the street and being the responsible kid that I was, I used to do a lot of the grocery shopping for the family.

My mom would give me a shopping list with only the necessary items (produce, dairy, eggs, etc.) but I would take my time walking down each aisle in the store, exploring all the cool boxed food options. I was really into cereals back then so I’d spend a lot of time in the Breakfast aisle. One day I stopped in front of the little pancake/waffle section and picked up a box of Bisquick™ mix because the pancakes on it looked so delicious. The following weekend I made my first batch of pancakes and everyone loved it. The instructions were super easy to follow, even for a 13-year-old! After that, pancakes became a weekend tradition in our home for about a year.

Shortly after I turned 14, I got a part-time job at Tim Hortons and they only had an opening for the morning shift on weekends. I was initially hoping for the afternoon shift since I’m not a morning person at all but decided to stick with the day shift so I could still hang out with my friends in the evenings. I hated waking up so early every weekend but managed to work there all through my High School years. Needless to say, my weekend pancakes were replaced with free bagels and donuts at work.

As a teenager, I used to look forward to the weekdays because waking up for 9 am classes was a treat compared to my 5:30 am weekend shifts at Timmies. Now looking back, I’m so impressed with my teenage self for being so responsible and hard-working, although I wish I hustled a little less so I could’ve enjoyed being a kid just a little more.

 
Bisquick Blueberry Cobbler Ingredients
 

After high school, I moved to Toronto to attend University and landed my first job as an engineer at General Mills, of all places! In case you didn’t know, Bisquick™ is one of their brands. I worked on several brands during my time there and one of them was Bisquick™! I couldn’t be prouder to work there. I never missed a single product tasting in their Test Kitchen when it came to the Bisquick™ or Betty Crocker™ brands!

This cobbler recipe is also the first dessert my husband, Bilal and I ever made together after getting married. Anytime we had a friend or relative visiting us, we would quickly whip up this recipe. It’s so easy to make that even Bilal, who is not into baking at all, has baked this by himself in the past! Now, that says a lot because I usually supervise all cooking and baking activities by him and Maya (our 6-year-old) … you know, to make sure there are no epic disasters in the kitchen.

Since having kids, I’ve been making pancakes from scratch with alternate ingredients (such as oats, bananas, cottage cheese, etc.) to increase the nutritional value for the family but Bisquick™ mix remains a regular item in our pantry. I mostly use it for this cobbler recipe and the occasional weekend breakfast if I’m in a super rush.

This recipe will work with any other brand of pancake mix that calls for eggs and milk to be added to make pancakes. If you have a mix that only needs water to make pancakes, then it probably won’t bake the same way. I’ve cut down the butter by two-thirds and the sugar by half from the original recipe to reduce some unnecessary calories and have a second slice without feeling guilty!!

This cobbler works great as a weeknight dessert but also as breakfast and afternoon school snack. My 6-year-old loves having this in her lunch bag and my super-duper-picky toddler loves it too. She calls it blueberry “pie”. We aren’t planning on correcting her anytime soon!

Bisquick Blueberry Cobbler

Prep time: 10 mins | Bake time: 40-45 mins | Servings: 6 slices

Ingredients

1 ¼ cup Bisquick mix
¼ cup sugar (if the blueberries aren’t very sweet, increase to ⅓ or even ½ cup)
⅔ cup milk (whole or 2% is best)
1½ - 2 cup fresh blueberries
2 tbsp butter

Superfood add-ins

1 tbsp ground flaxseed
1 tbsp hemp hearts
½ tbsp ground chia seeds

Instructions

  1. Heat oven to 350°F.

  2. Put the butter in the baking dish (8” square pan or 9” round pie dish) and heat for about 30 seconds in the microwave until fully melted.

  3. In a medium bowl, whisk together pancake mix, sugar, superfood add-ins (if using) and milk.

  4. Pour mixture over the melted butter in the baking dish.

  5. Evenly sprinkle the blueberries over the batter.

  6. Bake for 40-45 mins until the top is golden brown and centre is full baked.  

Note: I bake for 35 minutes on the “bake” setting, then switch the oven to “convection bake” for another 5-7 minutes to ensure the center is fully baked.
